EST 44 Conveyor Dishwasher

44” Wide, High Temperature sanitizing or Low Temperature chemical sanitizing Conveyor. Utilizes a 3-stage wash process (wash, power rinse, and final rinse).

EST 66 Conveyor Dishwasher

66” Wide, High or Low Temperature chemical sanitizing Conveyor. Utilizes a 4-stage wash process (pre-wash, wash, power rinse, and final rinse).

MODEL 181-VL Glasswasher

The CMA-181VL is a hot water sanitizing, single rack, under-counter dishmachine. It is a standalone machine featuring a self-contained booster heater.

MODEL 180 STRAIGHT Upright Dishwasher

High-temperature, straight-through design with its own built-in booster heater, producing 60 racks/hour. The Safe-T-Temp feature assures a 180-degree final rinse.

Warewashing Procedures

Machine Setup

To start the warewashing machine setup process, check your chemical levels and ensure all machine parts are in place. You can also prime the lines of your chemical dispenser if needed. Close all drains and fill the machine with your desired chemical solution.  As a final step before starting the machine, check the machine temperature to ensure your wares do not get damaged. Run the machine. 

Machine Wash and Rinse

For effective cleaning, always inspect dishes for large pieces of food or debris and scrape them off before loading wares into the machine. Arrange items so that all surfaces are fully exposed to the machine’s spray arms. Additionally, follow proper procedures for each type of ware material to ensure the correct temperature, chemicals, and wash cycle are selected.

Drying Procedures

Remove your wares only when the wash cycle is completely finished. If there are any dishes or utensils with excess water, allow them to air dry, and be sure not to stack any items during this process. Store washed wares in their appropriate places to prevent contamination and potential breakage. 

Shut Down Procedures

Turn off the warewashing machine and drain excess liquid. Thoroughly rinse any remaining debris from the inside of the machine, including curtains, rinse arms, drains, and trays. Place the newly cleaned, washed, and rinsed parts back into the machine. Finally, check to ensure your chemical levels are ready for the next day of washing.

Warewashing is the process of cleaning, sanitizing, and disinfecting the ware used in businesses and institutions that run dining services. “Ware” refers to all the tools and supplies required to run a food service establishment, such as dinnerware, glassware, flatware, cookware, equipment, and more. This process is absolutely crucial as these items are constantly in direct contact with humans and other food. If not properly cleaned, bacteria, pathogens, and foodborne illness can spread rapidly.

Manual warewashing is the process of cleaning, sanitizing, and disinfecting the ware in food service operations by hand. This is necessary in some circumstances, such as for large and oversized cookware, as well as delicate dinnerware and specialty tools. In these situations, automatic and conveyor belt dish washers are too harsh for these items, putting them at risk for breaking or improper cleaning. Manual washing is also helpful to fully clean pots and pans with grease, protein film, and hard-to-remove food deposits on them. 

Manual warewashing chemicals are formulated with specific chemical concentrates, so dish washers are not at risk of chemical burns.
