- Pre-rinse surfaces to wet them before applying the foam.Â
- Foam surfaces using a vertical cleaning method. Start at the bottom and move the foam up, working left to right or right to left in a pattern. Agitate as needed, then allow sufficient contact time for the chemicals to fully penetrate.Â
- Rinse and inspect your work. You can add steps here for high-alkaline and acid-based cleaning and ATP testing.Â
- Sanitize surfaces using the same vertical method as in step 4. Leave the wet sanitizer chemical on the equipment for at least 1 minute to fully activate.Â
- Inspect work and complete a final visual review for any visible soils, and complete ATP or biological swab testing. Clean tools and return them to storage; dispose of or remove safety gear for cleaning.Â

Cleaning-in-Place (CIP)
There are two main types of contaminants that can grow inside the interior of your brewery’s fermentors, kettles, and mashers that can spoil an entire batch of beer. These are bacteria and wild yeast. Different types of bacteria can cause a variety of issues within the fermentation containers, each with distinct telltale characteristics that brewers should monitor to avoid serving or packaging spoiled beer to the public.Â
While the outcome of contamination varies by bacterial strain, it typically renders the beer unsafe to drink or so sour that it becomes undrinkable. If these issues occur frequently, it likely means your containers have been contaminated with biofilm. Biofilm is one of the more difficult microorganisms to clean, as it can bind itself to the walls of your fermentation containers. Determining the origin of this biofilm and clearing it out entirely is necessary before any routine cleaning can be performed, because if any bacteria remain in your containers, routine cleaning won’t protect your batch from taste alterations.Â
The food-processing-grade cleaning products we offer are often strong enough to protect your containers from this issue; however, we recommend reviewing the chemical specifications to confirm.Â
The best practice for thoroughly cleaning these containers is the clean-in-place process. For the reasons mentioned, any surface that comes into contact with wort, beer, or yeast should be thoroughly cleaned and sterilized. To follow the core steps for the cleaning-in-place process, your team should:Â
- Put on area-specific PPE attire and gather your CIP cleaning supplies.Â
- Ensure all remnants have been removed from the containers. Manually clean hard-to-reach areas and small parts where needed.Â
- Pre-rinse the system by flushing hot water through to get out any loose soils. Follow internal SSOPs for temperature.Â
- Prepare your alkaline-based detergent, likely a caustic cleaner. Follow dilutions requirements set by the manufacturer.Â
- Add your alkaline-based detergent to the containers or tanks, and ensure that the hot solution covers all internal surfaces.Â
- Rinse and inspect your work. Allow all water to drain.Â
- If following a two-step sequential cleaning regimen in your brewery, repeat these steps using your preferred acid-based detergent.Â
- Spot-check key areas of your systems to ensure all soil and detergent residue has been removed.
- Inspect your work and complete a final visual review for any visible soils. Complete ATP or biological swab testing for confirmation that your equipment is safe to use.Â
- Final steps: Clean tools and return them to storage, dispose of or remove safety gear for cleaning, and, lastly, wash your hands.Â
